Almond Overload: A Weekend of Unexpected Baking

It all started with peanut butter chicken. One evening this past week, I was set on making a cozy, flavorful dish when I realized I was out of peanuts. No problem, I thought—I’d just grab another jar from the pantry. But as I rummaged through shelves, I found container after container of almonds. No peanuts in sight, but apparently, I’d been stockpiling almonds like a squirrel before winter. So, I went ahead and made peanut butter chicken—just without the peanuts, they were optional anyway. But, this pantry find sent me on a weekend-long mission to use up as many almonds as possible.

Turning an Oversupply into a Weekend of Baking

With the weekend ahead of me and a mountain of almonds staring me down, I leaned into the challenge. I love when the homestead reminds me to use what I have, stretch my creativity, and turn what could be a minor inconvenience into something delicious. Here’s what I made:


  1. Spicy Almond Butter Chicken – Inspired by this recipe, I swapped peanut butter for almond butter. The result? A rich, nutty sauce with a little heat, perfect over rice. Honestly, I might make it this way on purpose next time.

  2. Lemon Curd Almond Butter Cake – This cake was a bright, citrusy delight. The almond butter gave it a tender, almost melt-in-your-mouth texture, and the lemon curd added just the right amount of zing. It felt like the perfect balance of rustic and refined.

  3. Almond Cardamom Cake – This recipe spoke to my love of warm, comforting flavors. The subtle spice of cardamom and the nuttiness of almonds made for a cake that felt like it belonged in an afternoon tea on the porch, watching the animals roam.

  4. Almond Sticky Buns – I couldn’t resist making these sticky buns. The sweet almond filling and sticky glaze made them an instant favorite. They were the perfect treat with a morning cup of coffee, and I may have eaten more than my fair share.

Lessons from the Pantry

Sometimes, life on the homestead is about rolling with what you’ve got. Whether it’s an unexpected surplus of almonds, a bumper crop of zucchini, or a last-minute change of dinner plans, there’s always an opportunity to get creative and find joy in the process.

And while my pantry is (slightly) lighter on almonds now, I have no regrets. The weekend of almond-based cooking reminded me how much I love making the most of what’s on hand—and how sometimes, the best meals come from happy accidents.
